Ensure your gamertag is linked to the same ea online account that you redeemed your code with. if it is not, ea customer support has to link yoru gamertag to the correct eaonline/social site account.
if your gamertag is correctly linked, or if your gamertag isnt linked at all, all you have to to is make sure you log into the game with the same credentials you used on the social site.
for the 360 *zaeed is not currently up, but normandy crash is*

If you used the wrong email, contact ea customer support and tell them that you want your entitlements from the email you used on the bioware social site moved into the account that you used in game.
that should clear it up.
i will personally talk to ea customer support tomorrow to make sure they have the info to help. ill do my best

...and how do we get them to do that?
go to ea.com and log in to whatever account you used to redeem cerberus. then link your gamertag.
alternatively, try to log in to that account directly in the game (that will work if there are no gamertags assocaited with your profile)

Yeah, for whatever reason, Sinhound is linked with something OTHER than sinhound@hotmail.com ... I meant how do we make them change it?

if youre not sure what account your gamertag was associated with, i think if you call them and tell them your gamertag they can find the account. if that doesnt work, let me know via pm

nope. all that bioware site will do is link your content and cerberus to the account you use on here.
if you then log into your game under a different account (or have your gamertag pointing to an entirely different ea online account, it cant read all of your cerberus and promo content. thus, make sure you use your original ea online account (the one with your gamertag assocaited to it) for all things

I can't even sign into the EA servers from my 360. Keeps saying it timed out or some crap.

Thank you for chiming in, Michael. There really, really needs to be a detailed tutorial posted as a sticky for how to do this right. or a FAQ, or something. The reason i play console games is to avoid this kind of pain in the neck. Console games are supposed to be easy, not about linking accounts, emails being the same etc. registering games and whatever else you need to do to finally get this working right.

Also, only one of my gamertags uses the same email for the live id as my ea account although all 3 are linked to my ea account. Do I have to use the account with the same live id to use my code for the network? Can I do this from my console? or do I have to do this from my PC???

go to ea.com, sign in with your email-useraccount/password, this should drop you to your profile page.
Scroll down to the 'persona' section and click 'add persona'. Type in the info for your existing xbox gamertag and that should do it. Then restart your ME2 session on your xbox.
I'm guessing on that last part because unfortunately when I try to do this it says my gamertag is already taken and I'm trying to figure out how to fix it - but that SHOULD be how this works, clear as mud and the support posts from bioware people aren't too helpful (probably because it's not their system).
