I was just wondering if people have done enough with this game know out of the three element damage types - Lightning/Electricity, Fire, and Ice/Cold - which has the most utility against the most enemies?  And how does that stack up in Nightmare mode?

Fire probably deals the most damage, because it causes damage over time at criticals I believe. 

Unfortunately, Rage Demons are immune to it, which can be annoying, as they appear frequently at Rifts. 

 

On the other hand, many enemies like Despair Demons and undead are weak to it.

Almost all the bosses and Dragons seem to have vulnerabilities against spirit. That said, honestly, big damage is about combos so even if something is resistant to a particular element you can still use it to set off a combo that it isn't resistant to.

Spirit is the least resisted

Second is Lightning

 

Fire and Ice resisted by many enemies

And in Nightmare, resisted means 1 damage

 

For effects, burning is nice for DOT

Fire can deal damage in pretty high numbers. Easily multiple AOE 4-digit figures at mid game onwards.
Enemy resistance should not be a concern unless you are soloing. There are three other characters in your party, they can certainly take down enemies that have resistance against your chosen element, as long as they are well built and well armed. For instance, yesterday I took down Highland Ravager on Nightmare playing a heavy-Fire Mage with no issues.

Lightning is the best of the three - resistance is relatively uncommon and the 'shocked' weakness combines well with other elements.

Spirit is better, but as the OP has probably gathered, only specialisations offer it.
