Or does it transport me back into before I finished the last quest, like in the previous Dragon Age Games

You can continue playing, however make sure you do all follower-related stuff and crafting before doing the final main quest. Those aren't available after.

No, you can continue playing and it doesn't transport you back, but certain content gets locked off and nothing new is added so it's really not worth it. Companions won't talk to you and you can't do their quests anymore if you have any left over either.
