(That having been said, I generally min/max like crazy in order to get away with doing it. I have a lot of experience in that regard, with a lot of different games, so I generally do a pretty good job of maximizing to cover for any weaknesses in my aesthetic and specialization choices.)

I make myself two sets of gear.

 

One with the stats I want...and one with the looks I want.

 

...Then I use a third party "tool" to transfer the stats over to the appearance set. So I can have my cake and eat it too. <_<

You can buy a Templar armor schematics in the Hissing Wastes. It is a Tier 3 schematic, so I imagine you could craft it to 260-ish Armor using Tier 3 metal or 300-ish using Dragonbone. So you can have both the looks of a Templar and high stats.
I never bought it though, but I assume it is restricted as humans only.

Ah, but the companions? Well those robots need every advantage they can get, so they gotta get those stats. They don't always have the my hand guiding them- Wait! Is that it? Am I the maker, is that why the Inquisitor seems so blessed because they really do have a devine power guiding them? Is this an intentional meta narrative?

I do it depending on my level and how difficult the game feels to me at the moment (it applies to all RPGs). I just did it with my "end game" rogue armor. Ended up adding a battlemage hood because I didn't like any of the rogue helmet designs, but I had to make it of a tier 3 material because the dragon webbing has a bright orange color that didn't look good with my white armor (dragon scales).

 

Maybe I'm missing some materials, but they should have tried to keep the color options for all tiers constant. I can't find a tier 3 black metal.

I use one handed swords instead of axes / maces even though the latter ones are inherently superior.
