As in, how many sovereigns/silver/copper is '100 gold' worth? It just seems odd that the system was replaced with a generic 'gold' label.
So what happened to the Sovereign system?

I've seen a few things suggested:
1) Civil war, you gotta take inflation into account.
2) It's still there; this new system is just an abstraction to make things easy for players to understand or appreciate, kinda like how non-mages appear to (but do not) have superpowers in combat.
3) The money is like the Inquisition's money, not your personal stash like in previous games. There's a lot more of it. (just... finding random amounts of this much money in the wild is probably an abstraction in this scenario, too)

I just gotta wonder about money rates. So if gold equates to sovereign, wouldn't that mean I get 100 sovereigns early in the game during Caravan jobs for Cullen's gather money mission? Or that I'm selling pieces of armor for 1000's of sovereigns?

In Skyhold's Tavern, post-story completion, there's a...
"(potentially spoilery bit) 3 silvers (potentially spoilery bit)"
so, yeah. Coppers, Silvers and Sovereigns still exist. This is just an eased down version of the system. Instead of three different kinds of coins, you've one kind. And yes, it would be awesome if in the entire game, we'd get to loot amounts like 1 Gold, or 5 Gold, and such - it would actually fit in - and then have the prices balanced...
As in, armors and weapons would still sell for a couple Gold at the most, but Inquisition stuff (ie, purchasing Power/Influence later in the game) would cost hundreds, if not thousands of Sovereigns, as it does now (there's actually 3000 Influence for sale, at over 6,000 Sovereigns)
But hey. This is a much easier to understand thing. It works.
Shame we lost Coppers and Silvers from gameplay, but that's a system not to be overly mourned, as it's lack of presence isn't a major game changer.

Apparantly, animals are wealthy too as you can get gold from bears... rams etc.

Does gold convert to silvers? Since 100 silvers is 1 sovereign it makes sense that I could get 2 sovereigns for Caravan jobs...although that means I also get only 2 sovereigns for dealing with Merchant princes, so....
