Just wondering, as the title says, what do the warrior specs offer?
I'm leaning towards champion, mostly for roleplay reasons (I'm gonna wreck all dem demons as a normal dude!) but was just wondering how many benefits that actually gives me.

Champion is mostly tanking specialization while Templar is debuffer against mages and damager against demons. Reaver is more of damage dealer, but you'd have to play usually on low health. high risk high pay off.
Does champion have any offence at all? I'm mostly a tank but I like a bit of damage too.
nope. you are going to have to rely on the other trees for offense.
That's not exactly true. To The Death is incredibly powerful against bosses. Actually bringing Blackwall with full Champion tree and SnS passives trivializes most dragon fights.
It is however single-target and is not really worth it for regular mooks. So for that you'd have to look into the weapon tree of your choice.
Champion is immortal tanking, and a very strong single target debuff.
Reaver is damage, spamming Dragon Rage with occasional breaks to restore health.
Templar is solid buffs and a strong Wrath => Dispel combo, particularly against demons.
