So, I've found this little topic and wondered, has anyone tried it out? And if so, what stats, gear and talents would they recommend?

ummm....... I have nooo idea, I've never heard of anyone ever wanting to try and use a single dagger ever.

Well I never actually thought about not duel wielding as a rogue and as people suggest in the thread you linked to it should be doable, but I think you biggest problem is going to be similar to what an Arcane Warrior faces ... you won't have any decent weapon skills to speak of, and unlike the Arcane Warrior, you don't get to be the best tank in the game.
Still, with that said, Dragon Age isn't really all that difficult so if your rogue's theme doesn't fit duel wielding then you still should be able to do fine.

Well, I can always through a bunch of points in Dexterity and dodge melee attacks with ease. Mages will be a trouble but that's what Stealth is for. Will go for Ranger and Duelist if that's the case. Or I can focus more on Cunning and use Duelist + Assassin combo. I'm undecided on this since I fear it might end up being boring animation-wise. Constantly seeming the same thing should be tiring and I won't have many talents to make the fights a little more fresh

This may be a bit off the mark from what you wanted, but I did a Dagger + Shield Warrior which was quite effective.
Just grab sword and shield talents + Warrior talents. I would recommend Berserker + Champion for specs.
For stats, get enough strength to put on heavy armor (you can use strength gear to help) and put the rest in Dex.
It is an insanely tanky build. You will have heavy armor + heaps of defense, as well as health regen from berserking. The damage is respectable. Daggers are fast, so they benefit lots from berserking + runes and scale with both strength and dex.
I know it's not a rogue...but at least you get abilities you can actually use >.<
