Doesn't stop you from running into enough Darkspawn to fill a football stadium.
Hmmm, I finished the game yet. Are there a lot of them later on?

We run into plenty of Hurlocks, normal as well as alpha, throughout the game. Yet, Ogres, Genlocks, Emissaries, and Shades are absent from the world. I'm hoping that we see a come back of these enemy types with a future MP DLC. Our only hope for more Darkspawn in SP is through DLC, but I fear that areas such as Kal Sharok will be left for the next game.

There are no Ogre appearances, though they're casually mentioned in a war table operation.
It's just as well that they don't appear. The Darkspawn are still using their DAII variants. Aside from Hurlock Alphas, Genlocks, and Genlock Alphas... I despise the DAII incarnations of Darkspawn. Ogres, Hurlocks, Emissaries, and the unused Shriek concept should all be put to the torch.

Isn't Kal Sharok said to be beneath Tevinter? The Dwarves do a lot of trade with Tevinter because they are so close to one another.

Kal-Sharok lies beneath the Hunterhorn mountains, which are on the border of the Anderfels and Orlais.
edited for accuracy.

Orlais and the Anderfels. Also, isn't the Anderfels the location of another big Darkspawn related plotine going on? Weisshaupt anyone?

Yeah, darkspawn are sporadic at best when there isn't a Blight, so we don't see much. They mostly only appear outside of Blights near old dwarven ruins, since those are connected to the Deep Roads. Though I'm kinda confused why, since genlocks are supposed to be the most numerous of all (ya know, given that they come from dwarven broodmothers and the dwarves live close by), there aren't any of them hanging around...

Except the main antagonist is a Darkspawn himself. And he has sway over the Darkspawn.
Dude literally had an army already established. I actually don't know why the Darkspawn weren't more prominent, considering that fact.
I mean while I'm glad I didn't have to see the awful Darkspawn models again, I still do question why from a lore perspective they weren't used.

We probably will see more variants going forward. It's just that Ogres aren't that common amongst the hordes, Genlocks are most common where dwarves would be present, and Sheiks don't seem to be all that common comparatively. In DAO we ran into them due to a blight. DA:II because we had missions in the Deep Roads. Inquisition takes place 10 years after Origins, so most of the Darkspawn would be underground... Especilally the biggest ones who are probably sifting through rubble to find the next Old God.
Also food for thought: What role did the Architect or the disciples play in the dark-spawn evolution since DAO:A?

The army of initially Grey Wardens and then the red templars actually makes more sense than the darkspawn - the darkspawn are a threat that can draw in everyone across the nations before he can make his ascension to godhood. Use armies and foot soldiers that consist of humans and elves, the other nations are likely to consider it little more than internal conflicts, and so ignore things until he achieves his goal of becoming a god, at which point, no power in Thedas could stop him.
I mean, I realize that 'subtle' isn't exactly Corypheus's strongest suit, but with him making his move in a nation that's still recovering from a Blight, using the darkspawn creates a threat that demands an immediate response, and, in Ferelden, likely would result on them having to call on outside aid, drawing even more attention. Using seemingly unaffiliated groups like the templars and mages and Wardens keeps people misdirected, not realizing what's going on until it's too late.
