Yes. It is possible. You can reset his 2H Skills and move them to key Skills and Passives in the W&S Tree. You will be losing the damage advantage of the 2H as a weapon and some of the CC provided by the skills. You will, however, be trading it off for additional survivability. Some say the drop in Damage Output is somewhere between 15 - 20%. I'm not really sure about that though.
You can check out BOYvsVIDEOGAME's Solo Warrior Nightmare Series. He makes use of this build, and I suspect the build can easily be managed by the AI if you set certain skills to preferred over others. With Guard, I'm pretty sure there is less of a risk that Bull will kill himself spamming Dragon Rage.
