Since it seems that you have to pick between fire, frost, and electric damage I'm wondering what you guys think is the best for everything. It seems to me that electric is it, I can't seem to find anything that resists it unlike fire (Rage demons, some dragons.) and frost (Despair demons, some dragons.). The only electric enemies I've found were dragons and since they're bosses it's more situational.

you can still have in your inventory staffs from different elements.
I have Dorian specialized in 2 elements in his skills tree (and having staffs with the corresponding element) , same for Vivienne (with the 2 other elements) ; you can then switch between the 2 mages (I'm playing as a warrior)

I normally don't pay much attention to staff elements and just use whatever has the highest DPS. If I'm crafting a staff or have a few with roughly equivalent DPS, I'll steer away from cold staves purely on the basis of Despair demons.They're an absolute pain to take out in melee, so I want all of my ranged attackers to be able to attack them effectively. Beyond that, you can base it on what elements your spells are based around and whether you're using Energy Barrage. EB can be used as a detonator, but it doesn't seem to detonate enemies afflicted by the same element's status effect (e.g., EB with a cold staff won't shatter a frozen enemy, but EB with a fire staff will detonate).
There's also the fact that the highest DPS staff you can craft is using Dragonbone, which makes a fire staff.
