I want to see Griffons really badly! Think there is any chance we'll get some DLC where we get to experience a battle during the 1st or 2nd blight?

I recommend reading Last Flight by Liane Merciel. It's really good and it has a lot of griffons. I'm pretty sure that it also answers your question when combined with the epilogue slides of DA:I.

If you close your eyes and wish hard enough a fleet of griffons will appear under your command.

Dragon Age IV or V. The closer to the Anderfels we go the higher the chances. And having a bonded griffon is grounds enough for another 'Grey Warden' game. I really enjoyed Last Flight.

It's probably something to do with the return of the Griffons being a sign. What that sign is... I guess we'll find out soon enough.
