Did a search and did only find one thread from a month ago.

I was just wondering if some side quests and such disappear if you continue on the main storyline. I've read that Apostate & Templar encampments in Hinterlands are empty if you pick a side and come back to do them afterwards. What about Redcliffe? Can you do the stuff there after picking Mages or Templars?

I understand some areas have some changes, like Forbidden Oasis is full of Venatori if you go there after Haven destruction, but I find that a nice feature.

Yes some will disappear - but it makes sense that they do in the story context.  The obvious example is choosing between Mages and Templars. If you support the Mages then all the Templar quests disappear (you start seeing a string of messages of quest completions) since they wouldn't want you helping them out any longer. There are other quests that disappear (complete) if you don't do them before certain main story lines as, again, they would make no sense to do after that point in the story. The Samson quests is an example - they will end if you start Wicked Minds, Wicked Hearts before completing them because you have started the battle against Corpheyous, which includes Samson as one of his commanders.

So yes quests will disappear, areas will change according to how you play & the order in which you do things. I wouldn't worry about it much - just enjoy the experience as it unfolds.
