At first, it was running just fine, but now it's stuttering and jerking so much that it hurts my eyes and turns me off from playing it. 
I'm running it in Windows 8.1 (64-bit), on a GeForce 430. Can anyone please help me out?
Game is unplayable currently - too much stuttering and jerkiness

Try to disable V-Sync. Or enable it if it's not.

In the Jade Empire INI file there will be a line that reads:
ClampFPS=1
Change the 1 to a 0 and save. This should help some.

Pretty late to the party, but any chance you are playing it on laptop? If yes - try restarting (or turning it off and then on) it.
...if desktop - no idea:)
