So, I'm about five hours into the game, and I feel like I've only had two proper conversations with my companions. Granted, a lot of the material in the "third person" conversations have a lot of the filler that Dragon Age Origins had. Who are you, where are you from, etc. What I'm wondering is if the majority of interactions between me and my companions is going to be in the third person mode, or are they going to be in the typical cinematic mode? More specifically, will I have more of an opportunity to have the type of cool conversations I'm accustomed to from the earlier Dragon Age games and the Mass Effect games? They are a big part of Bioware games for me, and the lack of interaction has sort of kept me from choosing this as the game I want to play over all of my other games. Any answers would be appreciated.
I've just finished the Templar and "save the soldiers" missions.

You'll get real "cinematic" conversations after every main quest you complete; Progress through the game and they'll have new things to say about the stuff you've done. Romance options, companion side-quests, main quests will unlock new conversations. Otherwise, you have that 3rd person Skyrim-esque conversation you can walk away from at any time. How rude.
