I'm thinking of rolling a qunari mage for PT#2. I am wondering however - how do the background triggers work? Will the game override my qunari background to focus on being a mage? Will it just give me both dialogues?

I haven't rolled one yet, but I imagine it might be either a qunari or mage bit, but if they have a qunmage one, I'll be happy.

A bit of both depending on whether the topic is more about mageness or raceness, and sometimes you can choose which to focus on. Never really feels like part of your background is being overridden, just depends on context. Rarely you can talk about being a qunari mage specifically.

That's good to hear. That's what I was hoping. :)

I played as a Qunari mage, and there are instances where both traits are brought up (was talking to Josie about the Qun and when she asked for my opinion and if I would consider going to the Qun, got the option of "They aren't mage friendly").  You have plenty of reactions to your PC being a mage and a Qunari, and talking to your companions produces interesting dialogue (Bull thought it was hysterical that Inquisition listened to a Qunari mage).

I just started. It's really different from my last play through - at least early on it happens pretty often. There was a great interactive banter with Varric during the prologue about being Qunari.

I think this alone is worth rolling a qunari mage. :D
