Ah doing that quest as two-hander solo was so funny, basically you had to play the old wild west cow-boy (or ram-boy in this case).

Mount up, chase the ram and lure her into a rocky slope that works as map border. She will climb but will become stuck as she reaches the map limit. Then you can dismount and place that mighty blow that she deserves.. joking, poor rams..

Warrior I assume you need grappling chain with the knockdown.  WIth a DW Rogue you can approach them in stealth and they won't move.  It's quicker to just have Varric take them out with long-shot, though.  The inquisitor can't be good at everything.

Grapple does not work on friendly animals for some reason. It hits them but it never pulls them back.

Personally I always just use my rogue.

DW Rogues it's very easy, no need to Stealth before, just use Flank Attack. Easy as pie (OHKO all the time). If you have the upgrade then, you can kill two in one go. Flank Attack one, you go in stealth, Twin Fangs another.

For warriors the best options are: Grappling Chain, Charging Bull or Lunge and Slash (with the first being the easiest if the chain is not obstacled in the path).

Rogue: Stealth + Flank Attack (Teleport through target and hit them twice).

Warrior: Bring Ranged party, "Tab" key -> "Y" key, wait.
