So what did you guys do with his secret nobility? I chose to hide it in my first playthrough since I agree that it would actually hinder him from truly helping people. Being a noble means he has to deal with the other nobles and that might prevent him from just being out there with the others and lending a helping hand.

No, that guy I sent to the Gray Wardens. Fairbanks is the guy who's gathering refugees in the Emerald Graves to save them from Carroll and is secretly a noble. You can decide whether to make him a noble or not, but I chose not to.
Playing Dragon Age the Last Court makes it really clear that being a noble is an annoying balancing act: Want to give peasants right? Other nobles get annoyed at you. Want to actually give peasants voices for choices? Other nobles smear you as being some kind of blowhard. Its really annoying.

My Trevelyan is a bit shrewd in her decisions but plays nice on the surface. It's probably why she gets along with Vivi so well.

Because the Trevelyan's nobility almost never factors in the choices. The one time it shows up in the war missions its your cousins using your reputation as the Herald for intimidation; not a good sign. Depending on how you do the quests they may even try to bait you with land to trap you in an agreement despite you being the last hope of the world.
Lets be honest, the backstories factor almost zilch in the story. There were times I literally forgot my character was noble till I got the choice between Nevarra and Tevinter and there was a special option about relatives. The Inquisitor isn't bound by the rules most of the time. I mean just look at the party in Orlais - Act too out of place and you get kicked out. Last Court shows that nobility is kind of a cage if you're actually trying to improve your people.

I gave the evidence back to Fairbanks. I figured he's in better position to help people where he is. If he becomes a noble, he'll have to deal with all that BS where he'll spend half his time defending his decisions to other nobles and he won't have as much time to help the little people.

I revealed his heritage and then used Josephine to turn him into the most elligable noble bachelor in Orlais. I did the first because I thought he could put his family's holdings to better use than any other noble. I did the latter because it seemed the least mean option of those available (although I am sure he hates me for it).
That's the route I went.

(I never tried to find him. It's horrible what he did, either I'm agree with him or not, if he didn't do that everyone might perish... Well... I don't know whether that merits him got his head off... Prison maybe but not death sentence.)
I revealed it, much to seras disapproval. I'm Trevelyan and helping the little folk, why can't he?
(IMO) He can help better if he's out there at the field leading the little folk, instead in an estate worrying half the time about other nobles...

I revealed his heritage and then went with Cullen's option for the next wartable mission. It's basically about letting the poor man be. As a result, Fairbanks donated at least half of his inheritance to the people who needed his help. If I remember correctly, he then lived a quiet life as a noble supporting his people.
It felt very much like a happy ending to me. It's probably my favourite area mission because of that.

I kind of revealed the truth, believing that he could help his people more that way than he otherwise could have. Then I suffered a guilt trip because Blackwall disapproved. I'll either go with Cullen's solution or just leave the poor man alone this time around (not quite sure yet).
