I joke about elven deaths and such all the time. TES bias mostly. But a lot of these dudes are actually serious, lol, and I like my elven trim every now and then too much to be down with that.

In DA2, your companions all say that nobody will ever convict someone if they only kill elves if you say you plan to let the courts convict Kelder. They do it at night so the other elves don't revolt. Face it, how would you feel if a group's initiation involved murdering people like you? How would you feel if they could murder you and you couldn't do anything about it since everyone is racist against you?

So, the Military Leadership of Orlais sends Chevalier recruits to alienages with the sole objective of killing as many elves as they possibly can?

In Inquisition, the dagger Knightslayer says that the Chevaliers tradition does involve them killing any elf. Also, in TME where Michel describes his initiation.
