I'm seeing alot of people posting that they are at 20/21 completion in a specific zone. Where do you find the info on this to see how much of a zone you have explored or completed? Im playing on the PS4
how do you see progress?

It's actually in the Journal section of the menu. There's "Collections" tab there which keeps track of number of regions discovered in the zone and other such progress bar oriented achievements.
