What are the recommended levels to start the Mage or Templar choice? There's so much to do in the Hinterlands that I don't want to be too overleveled.

4-7 if I remember correctly. If you click on the main missions on the war table the recommended levels are written in the description.

A lot of stuff will adjust to your level, so no need to worry so much. I was 11 or 12 the first time I chose sides, and while most stuff scaled up, I was a bit overleveled for a few places that don't scale. On my last playthrough I chose sides at 5 even though the quest recommended 7 to 11 (i think), and so far I've only felt under leveled in a few rifts.

 

My advice: since most stuff scales, and since you won't be locked out of the remaining quests in Hinterlands, I'd make the choice, then unlock other areas, and explore around. You always have the option of coming back. In my opinion, if you want to go to all areas you'll end up over leveled anyways, either because you stayed in Hinterlands for too long or because you left and gain levels in other areas, then came back. Same applies to all future areas.

 

Edit: I think Drake is right, I was thinking of the recommended level range for another future quest. But still, if want to experience most of the quests and areas, there's no way to avoid leveling.
