2) 2 reasons, Leia is a strong willed individual; There is a major gap between unawakened force sensitives(they can use the force to a point without being awaken) and Awakened Force Users. For Example, Anakin and Luke were awaken during their respective movies to training. One of the reasons that Anakin won the pod race in his movie and not before Qui Jinn awaken Anakin to the force within him and thus allowing Anakin winning that pod race. Obi Wan awaken Luke to the Force and thus destroying the Death Star. both Anakin and Luke had the skill that they learned before becoming Jedi, they just the force to focus their skills. Outside of a few instances, Leia has the skill of the normal person and not a jedi like her brother or dad.
3) With Anakin/Vader, he has rage issues due to his childhood. Yes In TPM, he is damaged goods. Slavery on Tatioone is rarely pretty. His rage and his feelings of helplessness are a part of the root cause of his fall to the dark side and Sidious knew this.
