Is there a way to have a "WOW-style" quest list? I find it really jarring to go into this full-screen menu to choose a new quest as my active quest, and not have a visual idea of where/what the rest of my quests are.

You cannot change how the journal works. Perhaps one day someone could mod that, but I doubt there will be official changes.
You can only track one quest at a time, so it just takes a little more micro-management and focusing on one quest at a time, but if you look at the area map it will show all the quest markers for the region.
