Any member of a species that doesn't belong to the Citadel Council.
It's state-of-the-art technology and top secret. That means you probably shouldn't have Quarians or Krogan poking around it.

If playing the series showed me anything, it's that anyone can make a good companion. So, yeah, I'd let anyone on the ship. Well, excluding that IGN chick.

I once planned to play a trilogy run with a "humanity first" Shepard in which I wanted to recruit as few alien squadmates as possible, but I never started it.
In real life I guess I would not allow Krogans on my ship, as their violent temper is unpredictable. Also no Yahg and no unknown or hardly known races.

In reality? Probably only Humans and Turians on the SR1 unless my superiors suggest otherwise, though as a Spectre I still have final say. The Normandy is state of the art stealth tech, and the only reason I'd allow Turians is because they co-developed it. Under no circumstances would I allow a Salarian on, they are far too likely to be recruited to steal tech, if they are not already working for the STG. Same logic applies to Quarians, though I may have made an exception for Tali because even Udina, the super cautious Human ambassador, thought it was a good idea (and will even insist upon it IIRC if you try to keep her off).
Once I got EDI though, sure I'd start recruiting left and right anyone who could help the mission. I figure an AI can keep tabs on any industrial espionage, and if an officially sectioned terrorist organization can build an improved Normandy, there probably aren't too many secrets left to steal anyways.

In real life:
ME1: Humans and Turians only plus Tali. Preferably special forces of both including Vanguards, combat Engineers and Infiltrators.
ME2: no change
ME3: Representatives of all races that can bear arms, including a Batarian (there are good ones), a Salarian Infiltrator/Engineer from STG, an Asari Commando, a Geth Prime to replace Legion, a Volus Engineer/Adept, a Drell Infiltrator and at least one Krogan Soldier.

Again, in reality, there are Turians, there is no Citadel Council, anything we build will be built by us and only us. No aliens would get anywhere near it.

Anyone reasonably intelligent is welcome apart from Vorcha. Reapers, Yagh and other nasties dont count because a)reapers are generally the size of the ship, B)yagh are not exactly a space capable species. While elcor and hanar are ok as people, I have no idea how they even developed the technology to go to space or how they built it.
Asari, Turians, Krogans, Batarians, Salarians, Drell, Geth and even Volus would have their uses on a ship.

Honestly, they are my least favorite race in Mass Effect. Even more than the Asari. I can only think of two Quarians I actually like.
In Dragon Age, I used to hate the elves (overall; I still love Zevran and Tallis, and am ok with Fenris; I basically like Elves that aren't too... Elfy, though I despise Sera. And Merrill. And the Dalish). Inquisition really made them a lot better in my eyes, especially with Solas and Abellas.

Do a non-import 'vanilla' ME3 game and the Salarians steal the Normandy's stealth secrets as well as the Reaper IFF 'algorithms' to make stealth Dreadnoughts.
So those sneaky buggers are gonna' get the tech sooner or later.

Humans are still having issues accepting our own as capable soldiers. Once we manage that, maybe I'll have a different opinion. In fact, when you think about it, the entire Mass Effect series is pretty much assuming Earth has reached world peace to form the Alliance without any setbacks... you never hear about countries warring with each other...

I don't beleive the masses, I believe in the individuals. I would recruit any member of any species to jump into the team and go for the win. As Ms. Kelly Chambers used to say, character matters. Not race, gender etc. Do your jobs, be nice to your teammates or GTFO; simple as that.
Although I would reserve myself the right to throw vorcha and varren off the airlock if they started crapping the floor...

I know right, there are billions of the others and, yet with the exception of humans they can't equal the war assets of a mere 17 million quarians. Humans at least have the excuse of being new, but they are still better than all the others save quarians.
