I was thinking about an all dwarven team.. Me a dwarven noble, Ogren, Shen and Dog as a team... would that be do-able?

I think it will take a few levels to get enough skill points in the respective trees but it should work out just fine. I use Shale as a tank and due to her large health pool I find that Wynne barely uses her healing spells and is mostly casting mana/stamina regen spells, even on dragon fights.

Many of us, including me, have done just that, as a precursor to a solo.
It will be fine, just some things you will need:
- A surefire way of dealing with mages (a stealthed rogue/AoS/spell resist gear)
- Some form of crowd control. Shattering Shot is pretty good, as is 2h sweep, Warcry, Smite)
Consider putting a limit on potion use?

ok cause i think i have it then set up right,
Ogren is the warcry berserker
Shale the tank, healer
and dog the attacker. i think put 20 in dex rest in strength and overpower mages should be handy
potions? as in poultice you mean? shouldn't be a shortage of. on normal i had too many of them at the end battle like 11 potent poultice and had no healer then aswell.
though this is on har setting and i don't have an archer. a duellist ranger

What dkjestrup is saying is you might consider limiting yourself in the potions you use. Any fight can be trivialized with any group setup with a sufficient quantity of potions. Poultices, whatever.

Templar is a good ability for a warrior who can take care of the Mages. My last playthrough I was setup as the Mage Assassin using Templar with Spell Res gear. It worked very good.
Also you could save on some health potions using devour in the Reaver ability if you wanted. The dog maybe be a good way to get mages as well. He can charge or Overwhelm them. Does he have collars to boost spell resistance?

no spell resistance collars only +1 stamina, some cold and fire res. and the rest are all attack/armor collars

Also, just a note, relying on Dog to kill every mage in the game is very risky. There are times where you will face multiple mages, in which case you won't be able to take them all out, or times where the mage will survive an overwhelm, or times when the mage casts crushing prison on dog.
I highly, highly recommend a Templar. Being able to dispel magic (Cleanse Area) is very important in a no-mage playthrough, for crushing prison/misdirection hex etc. Also, 100% spell resistance is a very reliable way to take care of mages, as they can't do anything.
Consider taking a Warrior Archer PC with templar spec (I realize the penalty of massive, but you only need it for mages) and 100% spell resist, to kill mages for you, using AoS or just regular arrows. Not "required" by any means, but would probably help.
Might I suggest you take Leliana, for a rogue, and make your PC a 2h Warrior Templar? Then you have Dog to overwhelm, Leliana to AoS and your PC with spell resistance. Besides that, they'll still be great characters.

High fire resistance and you shoud be fine along with bows for everyone.

I had Leliana, Sten, Alistair and my Warden (DW Warrior)... you don't really need any special tactic to win without a mage, nor CC in any form. Just make sure every tank has provoke/disengage and use them to bounce mobs from one warrior to another. Sten was my herbalist, he loves to pick flowers.

Put all your characters on the bridge leading to the exit door for the Temple, the High Dragon can't walk there. Then give all your character a bow and wait till the dragon dies. Bring lot of health poultices of any size and some fire resistance potions. When the dragon use wing flip, just walk away. You just have to keep everyone over 50%.
Flemeth is even easier, she don't move and her wing attack is blocked by the landscape, so you never end under her claws.
Make sure you have all characters far from each other, so you don't get splash damage.from fire attacks

Maybe... you will need lots of templars for dealing with magic, and maybe reavers for the heal ability.... or a truck load of pots.

Not really, in a "real" situation using landscape as an advantage is a legit tactic. I was even a bit disappointed to see the high dragon going into the small house ruins where the chests are...
I wanted to trap her there...

I know this one trick when you keep running with your tank around the dragon but never actually attaking him. The stupid thing keeps turning around while my archers bring him down... now thats cheap.
