I usually have 2 and it feels like it works.
SnS i have Warcry and Challenge set up because all i want them to do is stay alive for example. Mages it is harder because the AI doesn't seem to handle AOE vs singe target well.
The bigger thing is to set things to disabled that you do not want your characters wasting time with - caltrops on Varric is an example.

Better to just respec him ASAP and get him something more useful.

No, I will take a useless power to get to the passives I want for example so there are a few abilities. I take that I don't want.

Set shield wall to preferred on your sword & boards, most crucial/OP guard-building ability by far.

Okay, but the question is, what if I ALSO set other abilities to preferred? Will this stuff things up?

all preferred does is tell the ai to favor this skill over other skills in a case where multiple skills are available. In theory setting all skills to perferred is the same as setting them all to normal.

The ai plays tanks fairly well. You should set shield wall, warcry and taunt on preferred. The AI will still prioritize shield wall but cast warcry and taunt when appropriate.

Cool, thanks. How about mages? Set Barrier and Fade Step to preferred, I guess? Will adding, say, Energy Barrage lead to problems?
For mages it depends on your skill build and how much mana generation you have. The ai has mixed success on fade step and theres no point to put it on preferred. Barrier preferred is a good idea for a more defensive playstyle.
One example:
Solas could have the following preferred - barrier, pull of the abyss, static cage - he will start off most battles with barrier, wait 1-2 seconds to get enough mana and then cast static cage which is really the ideal play for most encounters.
Every companion and skill build will use something slightly different.
