Level 5, have quests like Apostates in Witchwood, Troubles with Wolves, Farmers Duffalo.. just want to know how the hell I am supposed to do those quests when the enemies on the quests area are level 8 or higher. I feel like I'm stuck. I can't beat level 8 enemies. Tips?
What am I supposed to do?

Do the quests for the refugees. Get food. Take the rebel alcoves. Find the templar camp. Find the rebel camp. Those are in more friendly areas.

Farmers Duffalo for example. There is a Rift bang on the (shortest) route you will be taking the Duffalo back. I think demons there are level 12. Better you avoid them. I took the adjacent longer route. Come back later to kick those demons.

Do as many of the lower Lvl quests in the crossroads. If you wander some there are other miscellaneous quests you can pick up. Just do those til you reach lvl 7 and the go for those others.

The actual enemies you need to defeat for those quests should scale to around your level. You're probably running into random rifts, or enemy spawns like bears, Mabari and Outlaws, that are level locked at 8 or 12. Just avoid them, you don't need to fight them.
