About cheesecake:

 

When I went to Maui this last year, I discovered the incomparable beauty of a lilikoi cheesecake. I didn't know what lilikoi was at the time, but I was raving about it to everyone who seemed to care. I get home, do my research. It's yellow passionfruit, which isn't even endemic to Hawaii (though they grow a lot of it there now), and it's something that was already on my list of favorite things. So, no wonder I loved it so much. 

 

Point being, if anyone pops up with a great passionfruit cheesecake recipe, I may adore them forever.

Me too! I've been a fan of Ivy since I was little. I've gone as her for Halloween and everything.

Goat's milk cupcakes is better?


Do not malign the noble dairy goat! Goat milk you buy at the store is elderly and pasteurized and tastes nasty. But if you get fresh raw goat milk it is AMAZING.

And really great for recipes. "Whole milk" you buy is standardized at 3.25% butterfat. My goats start at 5% and go up to 10% depending on which stage of lactation they're in. If it's decadent baked goods you're after, goat milk is a fabulous choice.

Sheep milk is even better, starts at 10% butterfat, but their over all output can't touch that of a good dairy goat, who will cheerfully give you a gallon a day.

(This is how derailing works, right, with defenses of the noble and productive goat? I can offer to duel someone if it will help.)

Roast Nug (substitute rabbit if you can't get Nug)

1 dead Nug, skinned and gutted (decapitation optional)
1/2 bottle merlot
3 tablespoons salt
Many sprigs fresh rosemary and sage


Put the Nug in a container just large enough for the carcass. Sprinkle with salt and cover with merlot. Put a lid on the dish and stick it in the fridge for 8-24 hours.

Remove from fridge and dish. Admire lovely purple color of dead Nug. Rub with sprigs of herbs.

Light campfire. Put dead Nug on a spit. Sear over flame, then move spit over coals and roast, turning periodically, until done.

Alternatively, put dead Nug in roasting pan, add a little merlot, and roast in oven at 350F for about 90 minutes, flipping the carcass once.

If head is still attached, garnish with stick-on googly eyes, serve.

First, I'm a big fan of both of your posts...and your name! Big fan. I'm actually already pretty fixated on goat's cheese, even the stuff you buy in stores (goat cheese with blueberries at Trader Joes, yum!). I got to go to the Surfing Goat Dairy (also in Maui, lol) and I was pretty high on life when I went on the tour and got to feed the goats. I ran all around the fence, trying to get to every goat, especially the little ones (so cute! With their eyes!). Then I bought two spreads, a bar of soap, and a dozen chocolates...all made with goats milk! Truly a thrilling experience for me. I regret the flippancy of my post you quoted, and will never again foolishly adopt a limited mental understanding of the wondrous versatility of goat's milk.  ^_^

 

Second, you said your goats...Can we have pictures? It may be important, you see. To further our education. About the noble dairy goat. 

 

Third, in regards to the preparation of roast Nug, would you consider Syrah an acceptable substitute for the Merlot?

Well... I put the recipe for Elderflower Cordial, taken from BBC Good Food. Never tried this before but I will... And don't ask why I put this recipe here. Just don't :ph34r:

 

Ingredients:

  • 2½ kg white sugar, either granulated or caster
  • 2 unwaxed lemons
  • 20 fresh elderflower heads, stalks trimmed
  • 85g citric acid (from chemists)

Method:

  1. Put the sugar and 1.5 litres/2¾ pints water into the largest saucepan you have. Gently heat, without boiling, until the sugar has dissolved. Give it a stir every now and again. Pare the zest from the lemons using a potato peeler, then slice the lemons into rounds.
  2. Once the sugar has dissolved, bring the pan of syrup to the boil, then turn off the heat. Fill a washing up bowl with cold water. Give the flowers a gentle swish around to loosen any dirt or bugs. Lift flowers out, gently shake and transfer to the syrup along with the lemons, zest and citric acid, then stir well. Cover the pan and leave to infuse for 24 hrs.
  3. Line a colander with a clean tea towel, then sit it over a large bowl or pan. Ladle in the syrup – let it drip slowly through. Discard the bits left in the towel. Use a funnel and a ladle to fill sterilised bottles (run glass bottles through the dishwasher, or wash well with soapy water. Rinse, then leave to dry in a low oven). The cordial is ready to drink straight away and will keep in the fridge for up to 6 weeks. Or freeze it in plastic containers or ice cube trays and defrost as needed.

It's been about three days now. No moderators, no order. No nothing. Just chaos. It's literally every man for himself now. Females.. everywhere...

 

They've begun locking off food sources, trying to lure us out with the smell of baked goods, and talking about cupcake recipes. That's okay though. The alpha males only hunger for meat, and most of them haven't realized that yet. The beta males however... the ones that started this whole damn war in the first place... they're gone. I guess I should be glad, but.. what they do in those re-education camps... the screams of agony with the sounds of a female Inquisitor on dragon age... that's all I could hear coming from the tents for days.. I think one was even forced to watch the Iron Bull's romance.

 

I don't know how much longer I can last. One of them mentioned cheeseburgers and ram meat. That's that **** I like... but I must remain strong. I must... must... *sobs*
