Even if it didn't, no thread should be shut down just because someone disagrees. I can't stand that attitude personally. If everyone is equal, then everyone deserves a voice.

I have been enjoying this thread, even though I have no gifs to contribute. In the interest of keeping this thread open, I am bribing the mods with my recipes for carnitas and authentic margaritas (can you tell I live in the Southwest!)

Carnitas

 

- A big piece of fatty pork. Shoulder is a good cut. Estimate 1/2-3/4 lb per person. 

- 1 orange

- 3 limes

- Chicken broth

- Tortillas

- Your favorite taco toppings - shredded lettuce, tomatoes, cheese, etc. 

- Spice mix. 

 

Note: This recipe takes a few hours to prepare! 

 

The spice mix can basically be anything you like. Cumin should form the core - add in at least a few tablespoons of ground cumin. Now add whatever else you like. Ground cinnamon, red (cayenne) pepper, white pepper, black pepper, paprika, salt, garlic powder, onion powder and oregano are what I tend to use. I sometimes also sneak in a little thyme and/or sage. Use powders when you can. Mix it all up so it's a nice blend of everything. 

 

Cut the pork into cubes, about 2 inches on a side. Dredge the cubes in the spice mix. Put the cubes in a high sided pan, and gently fill with chicken broth until all the pieces are covered by water. Add the juice of the orange and one of the limes. 

 

Bring to a boil, and then reduce heat to simmer, uncovered. until all the water has evaporated. 

 

Once broth has evaporated (it should take about 1-2 hours), break up the pork in the pan. Ideally, the fat should now render out and you can quickly carmelize the meat. 

 

Serve with tortillas, lime wedges and your favorite taco toppings. 

 

Margaritas

 

Forget those fancypants Limearitas or Mangoritas you see in chain restaurants, those are basically slurpees with tequila. This is how you make an authentic Southwest margarita. 

 

- 1 1/2 shots of tequila. Use any kind you like, but clear works much better than gold. Get one that's aged at least a year or so. 

- 1/2 shot Cointreau (since good tequila is not expensive, spend your money here. If you can't get Cointreau, any orange liqueur, like Triple Sec, will do)

- Lime

 

Fill a short glass with ice. Juice the lime over the ice. Add the tequila and Cointreau/Triple Sec. Stir, and serve.

 

You can, if you really want, salt the rim or add simple syrup, but I personally believe that ruins a lot of otherwise great flavor in the drink.

Ha, well at least we can compare how many people care about women being in a fantasy medieval setting to ones that don't. And they're severely outnumbered, like battle of Thermopylae style, lol.
