and I am not sure yet for the third one. I tried Josephine but I wasn't very satisfied with it. Hmm. Ok After spending over a 100 hours getting the complete completeness I am going back to start on my mage character who is going to romance Cassandra.
DAO: Zevran
DA2: Isabela (though I really love romancing Fenris and Merrill)
DAI: Sera, perhaps.
Josephine is the one I was going to romance in my 'canon' world state, but I really love Sera's romance, to the point I want her to be the canon one. It's so cute and funny, really takes you away from the whole Herald thing and injects some levity into the Inquisitor's life. I'll see what Josie's is like, it might also be adorable. I've also romanced Solas and I'm part way through Bull's. Solas' romance was wonderful, more serious and ah... traditional (I can't think of the right word) than I usually go for, but I loved it. Not sure about Iron Bull's, but then I'm not sure how I feel about him in general.
I may be completely surprised and want Cassandra to be my canon romance. I've never had a male as my 'canon', but I adore Cass. She's my favourite character, besides Cole. I'm really looking forward to romancing her.

DAO: Zevran - refusing his earring and then having him offer it again and admit it does mean something gets me every time
DA2: Fenris- broody elf is broody elf, but at least he doesn't blow anything up or practice blood magic. Fenris rivalmance is awesome
DAI: Solas - Currently romancing Cullen on 2nd playthrough, and, although he is sweet I wish I was romancing Solas again. (Poor Solas has to wait until I get through all the other romances though- maybe by then there will be a DLC...).

Basically, the decisions I make in my first playthrough are the decisions that become canon. We go through life blind: we can't go back and replay events, repick our enemies, remake our decisions. To me, "canon" in a game is the playthrough that best reflects how I would respond in those conditions. It might not be what I'd do knowing the consequences, but it's what I did, and the most genuine outcome always feels the "realest."
I think Canon isn't a great word, more like what I feel is the intended choice.
DAO: Morrigan
DA2: No one, maybe Isabela.
DAI: Cassandra. I'd say Solas too, were he not race gated.
I've never understood people who only play straight characters and then need to tell everyone that they're straight.
DAO: Female Mahariel Warrior and Alistair (stayed as Grey Warden)
DA2: Female Hawke Mage and Anders (became fugitives together)
DAI: Female Lavellan Archer and Solas (*cries*)
As for patterns, I seem to have a knack for ending up with romances that are tied to the plot for my first playthroughs.
For DAI, I was originally gonna romance either Cullen (which would've made a pattern of Team Romanced Human Blondies); or Blackwall (which would've made a pattern of Team Romanced Grey Wardens even though Blackwall isn't a Grey Warden but oh well.) but Solas won me over. ![]()
DAO: Male Cousland Warden-Morrigan: I just love their relationship. They had such a do they/don't they love each other type of romance and although my Warden married Anora he had no problems leaving his country, Wardens, and people behind to enter the mirror with her. Actions speak louder than words with them.
DA2: Male Hawke-Fenris: Mr. McBroody stole my heart. But that voice and attitude won my Hawke over. They don't always agree but they do love each other.
DAI: Male Trevelyan-Dorian: Dorian is the driving force behind that relationship for sure. I would say my Quizzy admires him and loves him enough to want to give him everything he wants.

I thought I would be going for Blackwall initially because I really wanted to stay away from Cullen because his fandom kinda turned me off of him at first... but I ended up disliking Blackwall and really enjoying how Cullen's character turned out in DA:I. And Alistair will always be my favorite romance, he's just too perfect.

Cass is just adorable. I love how under her tough exterior she's a real romantic. It's so cute.
For me, then:
In Origins, it was always Alistair for my Cousland rogue, albeit with his dark ritual nonsense that they both strive to forget. I did truly and deeply enjoy the Zevran romance, because that's an elf who really does deserve a sweet ending. But my canon Warden always stays with Alistair in the end.
In DA2, I was never able to make a Hawke who romanced someone other than Fenris. I did try, though! I got halfway through an Anders romance and just couldn't handle the sheer idiocy of his eventual demise, and I never managed a Merrill romance because she came off as too much of a youngster to me. That, or Fenris was just too much perfection, I dunno. Anyway, my canon Hawke is an aggressive male Mage, who friendmanced Fenris.
Now, in Inquisition, I've so far played through a Cullen romance and a Solas romance. I've just started another playthrough, to explore the Dorian romance. I'm not terribly interested in romancing Bull, even though I like the character a lot. But I will eventually romance Cassandra, I'm sure. I have zero intention of trying either the Sera or Blackwall romances, since I just don't like those characters. However, I'm already certain which romance is my canon.
Hey, the Cullen romance was absolutely perfect, everything I'd hoped for when anticipating the game's release. I loved every one of the scenes and the entire feel of the relationship between the characters. It was just wonderful. But it won't be my canon, sigh. And I say that, even though I haven't finished every one of the romances I intend to try.
Nope, too late for me. Another elf snuck in and snoggered my dang attention! Dang you, Solas! No wonder they call you a trickster! (Mr. Weekes, well done!)
I'd go with Male (elf or human) Warden and Leliana, single Male Hawke, and single Dalish Male Inquisitor.
Female Elven Mage and Leliana. Still my favorite romance/pairing in teh series.
