I notice that a lot of people either didn't play Dragon Age 2 or didn't bother to romance anyone.
Who do you consider to be your "canon" romance from each game?

Some NPCS just don't romantically click with some player characters. That doesn't necessarily mean the characters are terrible or the game is bad.

I didn't say that.

I just meant not romancing anyone in DA 2 doesn't always mean not playing or not bothering.

While I liked DA2, it is considered by many the black sheep of the franchise for it's repetitive environments and unpolished gameplay.
Romance in DA2 is problematic because all four options are controvertial characters and love doesn't change the tone of the story as it did back in DAO.
In DAO you had Allistair, Morrigan and Zevran whose characters considerably changed if you romanced them, the former even infamously dying for the Warden against her wishes.
In DA2 despite having strong feelings for Hawke the LI still betrays him/her in the Fade, Isabela still runs off and lets Kirkwall burn, Merril still causes several deaths because of her mirror, Fenris still bad mouth mages even if you are one and Anders is basically a lost cause from start to finish.
The romances, while having truly sweet or compeling moments feel more like a token than an actual part of the gameplay.
They seem to have realized this and worked to fix it since in DAI there are several key moments where romancing a certain character changes how a scene takes place and, unless you royally screw up, the only LI whom you can't change is Solas but at least his romance opens up revelations unavaiable by other means.

I see that as a big plus for DA2 romances. Instead of them being clay you can shape anyway you want, they are real people. I don't see how romancing Merrill would have made her abandon her mission for preserving elven culture. Or how romancing Anders would have made him care less about the mage-templar conflict. Or how romancing Isabela would have fixed her character flaws. And it's only natural that Fenris with a mage Hawke would see them as the exception.
Being in a relationship doesn't fundamentally change a person, and relationships without any conflict are unrealistic. DA2 made some mistakes, but the implementation of romances is not one of them.

Its not true. Isabella come back with the book (its not a little thing), Merrill shatter the mirror, Fenris trying to drop his anger and trust Hawke (even is Hawke a mage) and in others (he is on good relationship for example with Varric, Aveline and Donnic, Sebastian... and refuses to betray Anders. Its important thing!)
True, these changes depend not on the love, but also on the respect. (Love is rarely alter a person's basic features. – I think.)

DAO: Alistair
DA2: Anders
DAI: ... I haven't decided yet. I've romanced Bull, Dorian and Solas with the same character (Bull twice) and Cullen is planned as well, and I love them all so far. Most likely, either Solas or Bull.

Alistair, Anders, Solas
Alistair with Lady Amell Warden.
Anders with female, diplomatic mage Hawke.
Solas with female mage Lavellan.
Yes, I love mages.

I'm a lesbian whose canons are partial-self-inserts, for Daveliam's data collection.
DA:O - Warrior Cousland, forever alone
DA2 - Dagger Rogue Hawke, "committed to independence", apparently. Although that didn't bother me much because Hawke had so much character on her own.
DA:I - Archer Rogue Trevelyan,
Yup, my canons collectively have terrible luck
At least I can be interesting for having an unusual combination though, right? ![]()
As for favourite but non-canon romances, it's Alistair (even though I haven't romanced him yet) and Cullen. Wish they made women like them ![]()

DAO: Morrigan. I joined her in the tent during our very first visit of the party camp and I followed her through the mirror without hesitation. (I always expected her to eventually turn on me until she gained some trust when the old-god-soul-ritual seemed to work as described...)
DA2: Marrill. But I only picked her because I saw no better alternatives and I thought it's better to keep a really close eye on her anyway (before she gets possessed by deamons and/or get's tricked into selling herself as a sex-slave in a random tavern...), so it was convenient (and her mirror was also a big part of her charm). It's not like she wasn't cute or nice but my Champion wouldn't ever consider to marry her and definitely didn't want a half-blood children (for the sake of the children - unless the child could get some super-magic elf powers from an ancient elf ritual and thus it wouldn't be a problem for her/him to live as a half-blood in Thedas).
DAI: Nobody. My heterosexual human noble had some kind of affection towards Solas after they met in their dreams but that was a subtle platonic thing. I considered trying to do "something" with Cassandra (it was hard to imagine how that would work) for the lack of any better options and I even regretted it a little bit at the end (during the last half of Trespasser) but I didn't. (Too bad Leliana wasn't available. It could have been her turn now that Morrigan was already taken + unavailable regardless. She went so crazy over becoming the Devine... An attractive and deadly ginger woman with crazy hunger for infinite religious/political power [with some real religious lunacy] on the side of the powerful Inquisitor. Oh my...)

I have to say that for me, even though I enjoyed DA2 a lot, and like the characters, the romances themselves felt a little flat to me. I said Isabela here as I feel that she goes best with my canon sarcastic rogue female Hawke, but her romance didn't move me anything like as much as Morrigan's or Sera's.

Not necessarily "canon" but perhaps favorite:
DAO A couple of years ago I probably would have said fCousland/Alistair, but in my last couple of games Al has grated on my nerves and I romanced Zevran instead. Since Zev is still with the Warden 10+ yrs later in DAI, I'm gonna go with him.
DA2 This one is easy: f-mageHawke/Fenris. ![]()
DAI I really enjoyed my mTrevelyan/Dorian run. I got into his character since I created (somewhat) a backstory for him. Second would be fLavellan/Solas, even though I don't care for the romance itself all that much. That one is simply for the lore and angst. ![]()

Female Warrior Cousland/ King Alistair (My canon. I love my Warden couples the best, it'd seem)
Male Warrior Cousland/Morrigan (Mistress Morrigan)
As you can tell, I can't decided who's canon so every bodies canon!
2. Male Snarky Mage Hawke / Rivaled Isabela (Yesh!)
Female Snarky Warrior Hawke/ Sebs (My Hawke is still alive, I dunno why; maybe she's lucky she's not in my Amell worldsave, lol cause she'd be dead. I'd kill Hawke instantly over Alistair, I love Alistair a lot )
Death Hawke/Merril. No need for class specifications.
3. Female Mage Trevelyan/Cullen
Male Mage Lavellan/Cassandra
Female Mage Lavellan/Solas
I love mages... Lol!

An overtly-sexual, promiscuous, morally-questionable person is sort of the opposite of what I'd like, actually. I much prefer Alistair and Cullen, not just because they're KISAs, but because of the rest too. They're also awkward, which is adorable.
