I am surprised by how few of these combinations appear to be the same. I didn't realize just how many LI combos there were between the three games. Good luck pattern fishing, OP.

Well, maybe it's not true romance in game but in DA:O when Im playing dalish elf it's Tamlen for my Warden. I don't like DA2, but Hawke is alone in my world state. Inquisitor is paired with Cullen.

My Couseland Warden had an interesting series of relationships. Started sleeping with Morrigan because he was a horndog and sex, but he didn't do that tsundere **** so when she looked to break the relationship off he agreed. A rebound/UST relationship with Leliana followed, which was sweet at first, but entered serious doubts when her past came out and she ended up hardened. Leliana's boasting about how good she was at seducing people, even when they were sure they knew better, sparked a crisis of uncertainty and distrust over if he was being seduced as well. It festered, and when Anora came he jumped at the opportunity for political power/restoration of his family's legacy and didn't try to continue any sort of affair. Overall it was a journey of growing up in many ways, and I like to imagine he had a mutually respectful political marriage which could develop to something at least friendly.
I had two canon Hawkes. First was a ruthless iron-willed male Warrior who rival-manced Merrill while taking a broadly pro-Templar stance after blaming himself for the deaths of his family (Carver to darkspawn, Bethany because he didn't take her to a Circle, his mother to a maleficar). Saving Merril from herself was his last true emotional connection, on top of some personal proclivities, but he was a hard man who came to believe in the hard, if cruel, choices for greater goods.
The second was a witty, initially amoral rogue femHawke. She rivalmanced Sebastian- initially for his rank, but gradually for him. They gradually evened out eachother- he was rivaled, but served as her conscience, and in the end she gave up dreams of nobility and he stood by her when they defended the mages from the unujust annulment.
For the Inquisitor...
I've had three in mind.
Female Human Mage was chaste. She was a modestly pro-Circle mage and moderate Chantry reformist, not a revolutionary, and aside from a crush on a Templar back in the day she abstained now because of ideals of not appearing biased and favoritism within the organization she was a symbol for. Not that there was anyone who particularly caught her eye, but she didn't need a lover as she was struggling with being the Herald, and the Inquistor, and rising to become a leader.
Male Qunari Warrior was Cassandra from the moment he saw her swordwork. He was a Chantry convert, and big in religion and faith, and looked at Cassandra with respect, admiration, and awe. She wasn't just a battering ram, and he wasn't just an ox, and they had a tender, sweet relationship that was bitter-sweetly ended when she became Divine. (He made the Inquisition into her personal bodyguard. Chaste romance to the end.)
Male Dwarf Rogue was a Josephine romance. He was the bloody Carta enforcer who underwent a redemption story with Josephine. She showed how violence wasn't always an answer, and his rise from rabble to Inquisitor was hard won and hard earned. By the end he had earned forgiveness, and learned to show mercy, and all for love.

I usually consider my first playthroughs to be "canon" since the choices are the most honest without any real planning. So...

(In my 2nd playthrough I went with Anders who would be my choice if I had to pick one.)

I don't know how to talk about my choices without spoiling or being literally short (names only) which is boring so spoilers are present. I also played more than once and didn't repeat the same choices...
1. Queen Cousland/Alastair: I didn't know marrying Alastair was race gated the first time I played Origins. I made Female Cousland Rogue just so I could be his Queen, and used that in the Keep as my canon story for my first play through of Inquistion. However, in my heart of hearts, my first playthrough was a rogue elf from the Alienage who supported Alastair to not be King; because let's be honest, he absolutely didn't want to be. Even the Hardened version I gave him in my second play through was neutral about the idea at best. Forcing him to be King the second time around was absolutely a selfish decision on my part. I have never wanted to be his mistress, I want us to be 100% together one way or another. As a Cousland, I role played as a vengeful woman who wanted to use people out of anger and didn't mind a roll in the hay with anyone prior to melting for Alastair. I tried to sleep with the male noble NPC, slept with the female elf NPC, slept with Lelliana, then Zevran, and somewhere in there, even Cammen the elf NPC. (hilarious, I still got him and Gheyna together anyway after our woods trip; Zevran approved.) I crowed in Triumph when I got Alstair to agree to the King/Queen Arrangement but not just out of power grab. Our of amazing love.
2. Female Rogue Hawke/Anders: I was totally shocked to learn I had helped him blow up a chantry. I mean, I was suspicious he was up to something, but had had not even an inkling. I screamed when it happened; but in the end, I could not execute or part with someone I had dearly loved for three years. I had roleplayed as family meaning everything to Hawke (I was pretty battered by the end considering I barely had Bethany in the Mage Circle and an Uncle who was happier with my cousin then me) and Anders was my family. I did end up sleeping with Merril and Isabella prior to Anders, but only because in my playthrough, they showed up in my freaking house and threw themselves at me; I sent them on their way though. I wish I had managed to max out Isabella, though, because Anders and Me on Isabella's boat would have been way better to do then flee to the mountains. Psh.
Female Human Mage/ Blackwall/Rebound Cullen first playthrough: I wanted to keep my Grey Warden booty trend; seriously! What's funny is that I got bored with him; I wanted sexy times and he wasn't giving it up. Just the awkward posed kissing scene. I wanted to move on to Cullen already. Finally I did the right? quest and then he left me naked in a barn. Although, not being modest, this didn't bother me as much as the fact that he chose the morning AFTER to finally go to this hanging he obviously had know about for a bit. Then I find out that I didn't even get Grey Warden booty, it had all been a lie. Amazingly, even though I had just been going on about him being so boring, the amount of betrayal I felt was amazingly strong. I told him to go be a Grey Warden for real and that trust was too important to a relationship, that we could be together no longer. (I'm glad, I've seen the "staying together" kissing in chains bit, and my Quiz would never have done such an awkward personal display and been happy about it.) I was actually heart sore about the whole thing. Finally, I dragged my human mage over to Cullen, as I'd been avoiding all discussion because I wanted the Chess Scene to be our relationship starting point. Two scenes later, I was feeling fuzzy reboud release from Blackwall. And shock squealed when Cullen asked me to marry him. Squee!
