So while I haven't really been able to pull it off yet, I do use the upgraded Fade Step a lot on my Knight Enchanter, and was wondering if I could "double tap" some poor sod and actual do damage twice with it.

Sort of. There is a passive in the fire tree called Flashpoint which allows your next spell to not trigger a cooldown (after you land a crit). This allows you to cast Frost Step twice in a row. I do this a lot in multiplayer because Frost Step doesn't cost mana, so I swing through, and then back again. You can't double tap the other spells if the mana isn't there, but Frost Step is always a sure thing.

with Anders i use Fade step to run away from enemies, for damage I use the elemental Ice and thunder spell after stonefist to make the most damage possible... but that's a rift mage build, not a KE

I was actually thinking more along the lines of curving around and smacking him again with the same Fade Step.  I already make great use of the Flashpoint though, it is quite handy for that.  Or tossing a few non-Spirit Sword spells out.

It's absolutely possible, just by fade-stepping through something and then hitting reverse just after you pass it.  You'll probably end up facing away from the target, but it's still fun, especially against rage demons.
