so here's one of my troubles, I'm doing those mineral survey quests, but some metals do not update and just vanished from my inventory like Bloodstone and Nevarrite.
I had some in my inventory, but suddenly it disappeared and when I collect more it doesn't update and stays on zeros (like 0/20).

By any chance you use cheat engine, cause i think your max stack offset has gotten bugged and that is what is causing it.
yes I did :/ I used one of those trainers that crash the game. Is ther anyway I can reverse or go around that issue?
Try reloading a previous save is all i can offer. Unless you want o fix it via cheat engine and i can post the instructions but they are not mine.
All I can say is make a backup copy of your Documents/Bioware/ Dragon Age Inquisition/Saves folder, then make sure you have uninstalled the bad trainer, ran a registry clean such as CCleaner or Eusing's Free Registry Cleaner (both free to download and use and, both work well and are safe.) Reboot after cleaning the registry then, start Origin and right click on DAI, choose repair game.
Load up, see if everything is okay. It should be. I had you make a copy of your saves folder just in case something went wrong. If all is well, no need to keep that copy.
It is a corruption of the max stack ofset basically loading a previous save will do the trick as trying to set it straight is slightly convoluted.
