I'm interested in modifying the basic store UI, essentially I want to add a pane that lists the description property of the selected item.

So on left you'd have a list of all the items, and as you click each one, the pane on the right fills with the appropriate item description.

 

Can this be done, first of all, and if so, where would I start on my journey? I assume it would be an xml file that goes in the Campaign folder?

I believe Lance Botelle has done exactly what you're describing, from screenshots I remember seeing.  Lance is extremely knowledgeable about custom UIs and modified UIs, and even wrote a guide on it.  Perhaps he would let you use his shop UI?
