(I also want a storage chest, which should also have been in the game at launch, IMHO.)
I find that hysterical, myself... I have a freaking fortress... your toon even says, triggered on entering the storage area by the wine cellar, "...there's no end to it!" But I'm limited to what me and my buddies can shove in our magic pockets. 
I'm not sure what the gameplay reason for limited inventory is. It feels like a vestigial "RPGs have inventory so we need to cap inventory" item that was put in because it's always done that way. Practically, SOME limit is needed or you could theoretically have a 57 GB game save due to ten thousand items in inventory to track, but I'm sure there's plenty of room to expand before hitting that extreme.
In game terms, player limitations are needed in places to require judgement calls, decision making, prioritization. The way the loot and crafting system works here, though, I'm not sure if any meaningful player choices are gained - just an annoying chore.
There are some compelling choices to be made in the Perk system. What you work towards, what you get sooner. "I should waste this point on the deep pockets thing so that running back to sell crap is slightly less annoying" is not a compelling choice.
