I'm building up my Rogue and planning to choose the Assassin specialization. However, is there any reason why I should complete the quests for Tempest and Artificer as well before I commit? Do you get any bonuses or extra gear if you complete the extra specializations?

You don't get anything extra, other than perhaps a bit of XP as you are collecting the special items. The specialty items you craft are not useful unless you commit to that specialty -'and you can only pick one.

If you complete the quests, as in turn them in to the trainer, you will commit to those specializations.  You can finish the requisition order, but if you go to the trainer and choose "Make me a Tempest" or "Make me an Artificer." You will be locked into that specialization.
