Might be a dumb question but is there any way to tell what the potential of a schematic is before you buy/loot it?

No but you can find the numbers online by searching the name. An amazing fellow uploaded crafting images of all schematics. He only has the low end of damage/armor on them for the most part but you can still get an idea of the raw damage or armor plus its appearance and slot layout.
