I played this last night, and I only encountered 2.   Now I'm glad that I didn't return to camp to restock my potions.

Yeah, big groups are way harder than any boss battle.
That said, I'll have to take your word for that comparison, because I've only ever fought one of the giants (in my mage playthrough - no sneaking past it that time), and I've never fought Imshael once.
I want to fight him just to see what the combat's like, but my inquisitors tend to be... easily corrupted.

He's actually a really cool boss - essentially DA:I's equivalent to Gaxkang but with a little more context. Tbh the whole quest was pretty cool, the devs just wrecked it with all the Giants - I was in such a vile mood by the time I'd finished it, it was ruined. Still... First Enchanter staff FTW :)

Tbh this is more an issue with Giants than quest design. I like the idea behind them but stupid things like guided missile boulders, random acrobatics and instakill attacks should have them cut from the game if there wasn't time to balance them. 'Course, get over a certain level and they become little more than damage sinks :P

I was playing a mage, so couldn't really stealth (though perhaps setting everyone else to hold and stealthing through with someone else until they teleported back to me would work). What I did do, however, even though it took a while was this; attack attack attack, use all my potions, retreat with surviving party member back to the Bone pit camp. Refill potions, return to Suledin, and repeat. Took a while and I raged a bit in my Let's Play of it, but eventually got through.

I mean, the key with giants is (1) never fight them at range, and (2) if you must fight at range, either hide behind a pillar or kite them away from rock piles.

They only throw rocks if there are rocks to pick up, and there are people not in swiping/stomping range. When they don't throw rocks, they're pretty easy to deal with.

For Suledin, the one giant that non-rogues can't skip can be defeated by killing its templar allies first (stand behind pillars so the boulders can't hit you), then rushing into melee range of the giant. At melee range, giants are big, hairy pushovers.

Giants are frickin' annoying even in melee range, with their AoE knockdown attack. Sure, they're basically harmless if you just let your tank do his job, while you shoot/spell them to death. Doesn't work so well if you want to stab them though.

But like dragons, all of their melee attacks have long telegraphs and long aftercasts. Evade out, rush back in and stab while they're busy thinking about how awesome their attack was, rinse and repeat.

Eh, meleeing dragons is far less annoying (except the electric ones with that shock field they put on you). And it doesn't change the fact that ranged don't have to deal with this at all, they can simply stand and shoot.

...and occasionally get whacked by boulders. Giants' melee attacks are heavy-hitting, for sure, but they don't do near as much damage as boulders.

As you said, once you get into melee with them, they stop chucking rocks. So put Cass/Blackwall under them and they become harmless... if you're an archer or mage. But even Cass/Blackwall can't stop your DW rogue from getting flattened.

The issue there is working out if the surroundings counts as 'rocks' (from what I've seen, this is inconsistent) but it's a fair point nonetheless. What annoys me more is that their rock-throw animation is very long, impossible to interrupt and the rocks actually track their targets, which IMHO is downright silly. The rock-throw does way too much damage for something that is basically impossible to avoid once it has started.

Of course, all of this I don't mind dealing with so long as it's not constantly respawning after having to restock on potions :P

Confusion grenades are great against these giants. Not for the giants themselves, but for the mooks around them. Once the mooks are gone kiting the giants is cake.
