Every now and then when I engage an NPC in dialog, the text of what they are saying shows at the top of the screen. Like if you wait the last spoken sentance shows. Most of the time (like just about always) it does not. But once and a while the entire conversation does. Is there a way to turn this on so that it always does? Would be helpful

Btw, the key that I stumbled on is Esc. As soon as someone starts talking, hit Esc and the entire conversation will be displayed. You can also fast forward through it by hitting Esc as you like

Wow what a brilliant idea. Use the key normally associated with exiting everything to do something totally different and unexpected instead.
So instead of exiting the conversation it instead shows subtitles.
Consoles don't even have an escape key.
So just how did someone arrive at that choice I wonder.
"gee we need a key to toggle on subtitles.... well the options on a keyboard are so limited, I guess we're stuck with this ESC key thing"
and just how did a choice like that make it past even 1 design review? unless maybe none of them included even 1 person with any knowledge of PC gaming at all.

If you hit Square (on PS4, should be X on Xbox) it skips through the conversation and - if you don't have subtitles enabled - will start to show subtitles.
But well, raging is better than checking, right?
I don't quite get how this is a remarkable feature? You either have subtitles enabled, then you have "dialog text" shown all the time. If you don't have subtitles enabled, skipping through a conversation (with Esc - it's the expected behaviour from this key in this situation, which key would you prefer?) shows subtitles for the rest of the conversation from then on (which I personally find kind of annoying but I guess this is so people who want to skip a conversation can still glance at the subtitles).

I have a concentration skills of squirrel on crack and sometimes, in particular in menial quests, I tend to lose my concentration and forget to listen, because I'm too busy straightening the items on my desk. I do wish to hear it all and know what was talked about, but now I have to load the game to find out. Seems to me, that on my computers, the game does not particularly like loading (may kill banter or music for example).
I do not like using subtitles, but I must, due to my hearing issues. Say there is a weather effect behind the conversation, (or the bug on both of my computers: full on Skyhold drums at all times) I can't hear what is being said at all. Having subtitles will make me stare at them, instead of the lovely graphics or the person I am talking to. My compusive tendendies dictate I must know what was said to the word- I would like to refer to the conversation log, such as in Origins rather than listen sidequest guestgiver again.
I would personally like a history of war table missions, as many (if not most) missions are part of a series and sometimes you simply forget or lose track.
This. One example is the Logic based mission of the Venatori spy, where you do quests to identify her out of Tal Vasoth, Smuggler and Hunter. I'm a great lover of logic puzzles, but I cannot remember what I got from previous mission, and number of my gamethroughs are also definitely messing up with my memory too.
