I don't recall Dorian talking about being gay much at all, except during his personal quest and the follow-up dialogue at Skhold. When does it ever come up again?
I actually stopped walking once with my female qunari character because I was so surprised after I finished a conversation with him and he said, "I do like watching you leave" or something to that effect. It really amused me. Course, anyone gay or not should enjoy that site. Dem hips...
Vivienne, but not really because of any dislike I may have. I just find Dorian and Solas more interesting when I need a mage or two in my party.
Sera and Cole. Sera because she was so incredibly annoying, she's probably the only character I've ever felt tempted to kick out of the group. Cole beacause he died so easily, otherwise I really liked him. I'm going to spec him as an archer in my new playthough and see if that helps.
Vivienne and Blackwall got to come along a little more but weren't used that often. Blackwall is a little bit boring before the "reveal" and Vivienne died very easily before she got her spec and after she got it I already had favourits. Iron bull got to join the party a little more. These three were my go-to team for dragon fights though.
I used Solas a lot in the beginning because it took a little while before I left the Hinterlands and recruited the others. Because my character was a mage I never had more than one companion mage with me (need warriors for tanking and bashing in walls, and rogue's for opening locks) and once I recruited Dorian he became my main mage. I decided I would bring Solas more on the playthrough that I would romance him in.
Cassandra, Varric and Dorian were the ones I used the most. I just really liked them.
I take sera , cass and BW . everyone else warm the bench....save for their personal story .
I would gladly take varric instead of BW..but he became booring .
Cassandra and Iron Bull.
I have tried using Cassandra more, but I generally stick with BW as a tank. I don't use Cole all that often either, but I equipped some nice daggers on him so I'll probably use him for dragon hunting in the near future. 
I pretty much brought Vivienne, Dorian, and Cassandra on every mission. I love all 3 of them. Varric/Iron Bull/Blackwall are all too boring, Sera is too annoying, Solas and Cole are both.
Sera; Vivienne; Blackwall and Varric dont get much, if any, use in my playthroughs.
Vivienne, Sera, Iron Bull, and Dorian. Nothing against Dorian, its just I've got two mages in my party (Solas/Inquisitor) and I don't want to sacrifice a rogue to bring in a third mage. Bull drinks all of his health potions fighting the first few groups of enemies, so I don't bring him along. As for Vivienne/Sera, I can't stand them, so I just don't bring them anywhere.
For rogues, I alternate between Varric and Cole. For the tough fights I tend to use Cole more often. Blackwall is my tank, and occasionally I'll drop my rogue and bring Cassandra along, although she's not gotten very much use in my Dalish mage playthrough.
iron bull only for combat abilities (liked his character), dunno but with FF enabled he waxed my party...
Blackwall is a beast as a tank.
Dorian
Can't really find any enjoyment with Necros.
Well...i always had Dorian, Cassandra and Varric in my party. Soooo...i guess...everyone else?
Vivianne is perma banned from my partys since she was so mean to Blackwall.
I can't believe how many people don't use Cole. Man, once his Assassin abilities are maxed out and you get him decent armor with the right upgrades, he's a freaking beast out on the battlefield. I take him almost everywhere. He is a bit too squishy for dragon fights though.
That said, I rarely take Viv with me, because I'm usually rolling with Dorian and Solas for my mages. Once she's got her Knight Enchanter abilities, though, she's pretty awesome on the battlefield. She's just so... Orlesian.
I probably take Viv less than the others because I either play a mage or bring one of the others. But since i'm more interested in the dialogue I enjoy listening to what they say to each other so I plan on taking them all at one time or another. I love taking Cole and IB. Actually IB and any of the others has some nice conversations going on.
Cole because rogue compared to archer really sucks this time around. I like his character but if I am playing on hard he dies really fast.
