Play as a weapons-focused Sentinel. No silly "superpower" abilities, just a complete package kind of soldier.

Uh, don't biotics fall under 'silly super-powers'?

Hell, play as an engineer if you feel that way. Or an infiltrator.

Classes are too mainstream, you might as well try a SolSent Shepard:

Wouldn't the soldier class be a more appropriate soldier package?

Also, if you plan to play on PC I'd recommend nabbing a ME2 mod that unlocks all weapons to all classes.

Technically not with things like Marksman and Adrenaline Rush. One makes you able to carry out sustained rapid fire that is incredibly accurate (while also making your weapon fire faster than is physically possible). The other is the ability to slow down your perception of time and somehow increase your weapon damage and health for a short duration.

As I said, Engineer and Infiltrator are the two classes that don't have the 'super-power' abilities, so to speak. One just lets you spam drones, the other lets you cloak and snipe, with a small time dilation.

Once you go Vanguard, you never go back-wuards.

Vanguard was certainly my favourite. And whilst it's designed for close quarters, I also find abilities like Pull make long range combat quite fun as well.

Personally I find Soldier pretty boring.

That's a very poor man's soldier though, with none of the ammo powers and none of the big weapon damage increases. If you want the challenge then that's cool, I've been thinking of doing something similar.

Infiltrator is most fun because lolTacCloak makes weapon weight irrelevant, so you can carry a sniper for long range and an omni-bladed shotgun for punching things to death in the same build, and both styles are highly effective.

Played as a soldier in ME, became a Sentinel in ME2, justified it by saying Shepard was exposed to element zero when he was spaced and Cerberus wanted to make Shepard harder to kill, so he had the tech armor and biotics.
