Oh yeah, Mononoke Hime is a good place to start. Also, Ghost in the Shell is a must (the original one from 1995, not that CGI garbled thing named Ghost in the Shell 2.0). I would also suggest Akira and Sword of the Stranger, the latter is more of a pure action anime, but it's the damn best action anime I've seen to date!
I would obviously advise going for the original language and subtitles, because even though good dubs exist, if you really get into anime, you'll find that not all dubs are good and not all interesting shows get dubbed, but you'll fund subs for basically everything, so getting used to it is only convinient.
Bah, screw it, plunge in the Anime and Manga thread here in offtopic and we can provide you with a list that will take years to watch and read. Anime Otaku, ROCK OUT!!!

I know a crap ton of people who wouldn't get GITS nor enjoy it despite it being one of the best animes ever produced.

Dub is the safest bet for new comers.
Japanese subs can be off putting for somebody who's gonna watch their first.
So Fullmetal Alchemist: Brotherhood is cool cos it has an amazing dub.

But FMAB is really "one of those" that you'll get hooked really early on.
It's not LOTGH which is 110 episodes and pretty damn slow.
But going by that I'd say Spice and Wolf.
Or Code Geass.

I agree, I think I need to start with something less for starters cause I've never watched anime before, so I need to get into it slowly so I can like it hopefully.
