Vivienne because this seems like her kind of world, and Sera because she would seem totally out of place in this high-society place.

I played it safe on my only playthrough so far. I brought Cassandra (one of the Divine's hand and my bodyguard for my human mage), Vivienne (because this is something very familiar to her and plays it well) and Blackwall (because of his affiliation with the Grey Wardens). When I go through a second time, I'm going to throw caution to the wind and bring Iron Bull, Sera and Dorian.

I brough cassandra, Viviene becouse it though she would give me tips and have more local dialogue, and sera for the lols since she would be so out of her place.

and i dont regret it, she gave me 3 loot stash from her friends, one of them had a witch schematic and the other a fade touched cloth, Also later on when i recruited dorian they banter on how she survived the ball, and she said she simply refused to play their game, and dorian coments sth like, yeah right, but if you do that, their try murder you, and she scoffs him, lmao.

Always whatever LI I have, then Varric, and Cassandra.

I brought Vivienne because I thought she wanted to come and would probably enjoy the ball. I brought Cassandra for the same reason. Since she is actually a princess, I thought she would be familiar with a ball like that and might enjoy it (boy, was I wrong. My Quizzie did not have good intuition when it came to her companions). Also, Cassandra was the one who proclaimed the Inquisition, so it made sense. Last but not least I brought Cole for no particular reason. Well, maybe my Quizzie was worried Varric or Sera wouldn't behave.

Next time I intend to bring Dorian, Blackwall or Iron Bull (not sure) and Sera, because I hope that someone might indeed misbehave. (Yeah, I know, not going to happen but one can dream.)

First runthrough, I brought the team I thought would be considered most impressive by the audience: Cassandra, as the right hand of the Divine and of noble blood (even if foreign), Vivienne, who holds a powerful position at court, and Varric as an eye-witness of the Kirkwall incident and a definite people person (and apparently, much more famous as a writer than I'd realised). Apparently, all popular choices, lol.

Having experienced all the options now, I'd say my ideal team would be the above, but with Sera in place of Varric. Her post-mission conversation makes more sense if she was directly involved, and there is the side-quest too.

If you'd want to upset the nobles, I'd say bring the scary Qunari mercenary, the evil mage from the Imperium-that-we-hate and well, probably Sera again. ;)

Cassandra, Sera and Vivienne. I haven't reached it yet in my 2nd game. I'm close, but I've slacked off to play an older RPG which i haven't played before.

I brought Cass and Vivi because they made the most sense lore-wise. It just so happened that the other one happened to be the one companion who gives you a new quest in that main quest: Sera.

Vivienne, Dorian and Varric. I thought about bringing Cassandra but she has no head for Politics, Intrigue, The Game, Lacks that needed grace / charm. So thought it best to leave her at home that night.

Dorian was raised as the son of a Magister with the intention being for him to take his fathers seat, despite his rejection of all that he still has been taught the skills needed at the ball and so can well represent us there.
Vivienne, goes without saying. Mastery of the game, well known and respected in the court, easy one.
Varric. Famous writer, well known and respected in the court, a noble of the merchants guild and familar with the underworld thus good on the side of intrigue.

Usually always Cassandra, Varric, and Vivienne but I did flip it one time for Iron Bull, Dorian, and Vivienne

Favorite line: "Just how drunk are you boss"- Varric

For my first playthrough, Sera, Vivienne and Iron Bull.

Sera was my LI, plus I thought she might have contacts with the staff (as it is, you can get some Red Jenny caches for items & approval).

Vivienne because I thought she would have a lot more involvement and insight than she did, plus unique scenes with Celene.

Iron Bull because I thought he could use that Ben Hassrath training to help us find the assassin.

Now I just bring my go-to party (including LI), still need to bring Dorian at some point. I notice Solas wears a tea cosy if you bring him, yet Viv and Cole wear no hat at all. How strange!

Vivienne, besides frustratingly doing nothing special, looks horrible in that outfit.

At this point I have brought them all. Sadly it really makes no difference who you bring as they play almost non-existent roles outside of a few lines of dialogue. If I had to choose my favorite though it would be Sera, Solas and Dorian or Varric. Dorian and Varric at least have some uinique insights. Sera offers an extra "quest" and hearing her be announced is giggle worthy. Solas is just contrastingly comfortable and he is like royalty to the elven servants.

Cassandra's so worth it for the intro alone though. Sera's definitely gets the best one imo.

Cassandra, with her beeing the right hand of the Divine and the Hero of Orlais.
Vivienne, because it's the game.

This.
Third one was Varric, because hey we have a celebrity, we might as well brag about it. As it turns out, I was right.

Yeah it makes it impossible for me to ever bring her. That formal attire fits her like a burlap sack fits Gisele Budchen.

In my first playthrough, I bought Solas, Blackwall, and Varric.  They actually seemed to like 'Blackwall', and I never found Varric.  (grumble, behind Halla doors, I need those halla!)  Solas just seemed amused by the whole thing.

Second playthrough, I bought Vivienne (I really expected more out of her), LI Cass, and Sera (who actually gives you disapproval if you talk to her with almost full court approval, owch!).

Third playthrough will be IB, Dorian, and Sera again for the romantic dance... I'm almost at that part.

Fourth playthrough, I'll finally be able to bring my darling Cole.  Who really isn't going to like that my character is going to let Celene die to please Cullen and put Gaspard on the throne, hm.

First Playthrough - Blackwall, Solas, Varric

Second Playthrough - Cassandra, Dorian, Sera

Third Playthrough - Iron Bull, Vivienne, Cole

Sera has a hilarious introduction to the Court. Vivienne's introduction fits her perfectly. Cole isn't introduced at all. It's kinda hilarious bringing Blackwall once you know certain things about him.

Dorian for the dance (he's my Inquisitor's love interest), and Cassandra because she's of noble descent. Her introduction was funny ("Get on with it!"). Then I brought Sera because I like to make her do things she hates and I was pleasantly surprised to find she had fun with it ("Her Ladyship Mai Bhalsych of Korse!").

Really, for storyline purposes I feel the whole nine companions ought to have come along, sure there is combat, but I'm sure they could have found a way to force us to choose three companions for the fighting when the time came for it.

Is there anything special if I managed to bring Sera and Iron Bull with me to the Winter Palace? I know Elves and Qunari aren't very popular in Orlais...

AFAIK, nothing for Bull, except all the pampered Orlesian ladies want to ride him. For Sera I believe you get a little extra quest.

Blackwall, because he's my Browall.

Sera, because I wanted to dance with her. No really, just dance. I am aware she's gay, but I simply love her character. T'was reserved for romances, but I was reimbursed by the name she had the announcer publicly introduce her with. There are worse replacements than Josephine, too.

Cole, because it's a party, isn't it?
