For me it's because I find being forced to play human too boring. Not only do you already have to be human in most games, but in DA you have these other races that are so interesting to me. Being forced to be a human in DA2 was like being a hungry kid looking in the window of the candy store but can't have any of it. Also I identify much less with DA humans: the privileged, the default, the majority, the oppressors, the white bread. Plus their culture is too generic(and the varying human nations have little to differentiate them from each other outside of accents and codex entries) to pique my interest.
If DA:I had forced you into one race like in DA2 but that race was anything but human, I still would have bought it.

I would actually be more inclined to play as human if I could play as a commoner criminal or something.
I would be all for that.
Still when I found out Avvar and commoner used to be an option in DAO and were removed I cried out in horror and wept. Yeah I did not really do that but you get the idea.

That all sounds well and good, however the sense that I'm gleaning when people talk about the Inquisitor is that if they are human, they mostly seem ignorant of their culture and ask inane questions they should already know. They've been described as humans in (insert race here)'s bodies.
So I ask if it's really like that for those of you who choose dwarf and qunari, since I hear elves get really impactful in the last half, especially we a Solas romance.

My Qunari talks about their culture with bull and josie, you can state if you are a Qunari mage that your existence is against everything the Qun stands for. Plus you have a whole investigation chain with bull about Qunari culture and you have a similar conversation with Dorian. Plus finding out that Qunari are actually dragon blooded or dragon people. Dorian conversation is pretty much about how the Qunari inquisitor has NO WHERE to belong to.
Since they are kill or sight/qamked by the Qunari and pretty much feared by everyone else and the Qunari inquisitor is at least happy depending on options that Dorian understands that Tal-Vashoth are pretty much a whole different people. I personally found it shocking that it was the Tevinter mage that was the most accepting of you.
My Qunari became fast bro's with Dorian because of it.
Doesn't last long? Your still feeling the hate up to the winter place if you are Dalish or Qunari.

i must admit that being a Dwarf or a Qunari as the Herald does not fit the story for me.

For me the have the best place in the plot because you have a neutral view of everything. Unlike the humans or elves they don't have all the bias of the history and people around them and can make clearer choices. No history dogma nor history of hate to fuel there choices or views.

My Qunari Inquisitor and my second Dalish Inquisitor are guys. Like Honourable Bigot said: they're all non-human.
Also, leaguer of one was basically saying that they think the additional races are worth it by posting a pic of their f!Qunari Inquisitor.

True, but the Qunari have the intimidation factor due to their size. Dalish Inquisitors don't have that advantage.
