If I can make a suggestion. Once you are done sauteing the scallops add a bit of butter to the pan and caramelize some onion for the steak. Finish the steak by spoon the liquid left in the pan over them.

Wow.  That's a super good idea. Thanks.  I don't think I have any onions right now, but I'm gonna caramelize me some shallots!

Wow.  That's a super good idea. Thanks.  I don't think I have any onions right now, but I'm gonna caramelize me some shallots!

The trick is to not clean the pan before you start caramelizing the shallots. You want the shallots to pick up as much of the scallop and miso flavor as they can. You could also deglaze the pan with a bit of sake after you cook the shallots. If you have sake

This is damn fine advice.

Also, get a "hard sear" on the scallops; that is-- very hot pan (med-high) small amount of oil. Get them nice and brown but DO NOT overcook. They should still be a bit soft in the center. If they are rubbery you left 'em in too long.

Red wine and steak is always a great combo. So I would go for it. You could add some minced rosemary as well. Because rosemary is pretty much the best seasoning for beef.

one more thing NEVER use cooking wine. For anything.

 

Yea cooking with a cooking wine is like cooking with really cheap booze. It's better to use a drinking wine instead.

Well it's hard to find the real stuff around here.  I live in North Carolina!  And I went to the super G mart, so it's as close to China as I can get.

I haven't had pineapple on my pizza in a while.  Maybe I will tomorrow. I might even get it from Papa John's since they're closer to me than Domino's

Final dinner report: Scallops were awesome (will hand out recipe on request).  Steak was overcooked (for me, at least - medium rare).  But the caramelized shallots in wine with rosemary saved it. Yesss!  Also old fashioneds + wine + port + chocolates = Happy Girlie!
