Click Prestige, find the banner you like, and press "Set" (I believe anyhow, going by memory).
There are no easy scrollable solution, so you need to go into the challenge from the banner you'd like, and find it there.

you need to finish the challanges to get the banners...
if you did... do it like Torm said.
challanges -> select a challange you did finish ( the stars ) and switch through the stars... 5th star is always the banner ( if iam not totaly mistaken )... if you did finish it.. you can select it and put it on.
If you want to change it.. do it the same way just with another banner
