How should I level up my Soldier?

I was purely set on ignoring the melee choices in my Soldier tree , however I shortly found out theres a neat little combo when you melee lol so is it worth leveling up the melee parts in my tree?

Don't think it's worth it, Durability should be much more helpful. You need to focus on melee to make it viable. I did a pure melee playthrough once (link in my signature) but I don't think something like that can work on any class other than the Infiltrator and, maybe, Vanguard.

Melee is not worth giving up durability for, and it only really works on CQC classes like Vanguard and Sentinel.

Ah alright then , so can you recommend any good weapon load outs for a Soldier? I know for a fact I wanna keep my AR however idk if I should have a shotgun or a sniper. AR doesn't slow down time this much in this game as it did in ME2 so lining up my headshots are kinda harder in this game.

Sniper rifles have a weapon mod that increases time dilation. Raptor, for example, can be considered an assault rifle with a scope. It does mediocre damage, scope magnification level is lower than that of other sniper rifles, has large ammo capacity. You also get to use sniper rifle-specific mods, such as Enhanced Scope mod that reveals targets through smoke (its equivalent for assault rifles increases weapon weight and is only available with Citadel DLC), time dilation mod. 

 

From assault rifles, Mattock is pretty decent. I combined it with Eviscerator for my Combat Adept. Soldiers will get a much faster power cooldown than Adepts due to their high weight capacity. You can also use Talon instead of Eviscerator, it's like a light shotgun called a pistol :D

For Adrenaline Rush, don't go for Power Duration on Rank 5. If you go for durability boosts in AR, don't go for Power Duration, but go for Melee damage on Rank 5b instead because you want to be able to spam Adrenaline Rush whenever you're out in combat to restore your shields.
