I think people simply need to agree to disagree on this type of thing. Don't use the mod and move on.
Games are a virtual reality and that does not by any means lessen the creators and writers etc. A fantasy game with fictional characters in a fictional world?
These give us role play which allows us to experience different views about everything, whether or not it is right or wrong. I love Bioware games for this reason, choices and consequences.
Games and mods are all part and parcel of freedom of expression. I have seen many mods that made me roll my eyes, so I moved on. 
I downloaded about 50 mods when I felt bored with Skyrim, these were mostly tweaks and realism mods but my god, I got a few hundred hours more play from that game because of them.
If people want to use mods to make a character straight or bi go right ahead. It doesn't affect my game or my special sensibilities. People take these things far too seriously. I don't use those mods and don't give a flying fork if people do.
Political correctness has been around for a long time but in video games? Morality and social justice? There is enough of that in real life I would like games to continue being an escape, if you please.
No-one with half a brain would try and change a persons' sexuality in real life, well I wouldn't like to think so anyway. I read somewhere that Cassandra is apparently supposed to be a lesbian because she has short hair? I find that hilarious to be honest.
I don't see a huge issue here apart from stereotypical crap and bad advertising.
Maybe this is a generation thing, social media creating idiotic arguments that are frankly pointless.
