They aren't redicuoulsy large like Qunari.
They aren't comically short like dwarves.
They aren't as pathetically skinny as elves.
They are just right.

The elves are way too thin. The qunari have terrible hair. The dwarves can't romance Cullen.
Elves are not too thin, there are lean, their issue is their broken arms. The Qunari do not have terrible hair, they just have limited options and the options the have are okay, not great but okay. If Dwarves cannot romance Cullen, then isn't that Cullen's fault for not having a preference for Dwarves as opposed to the Dwarven race ?
I play often as Human because they are the most neutral. They can have any kind of worldview and can come from the highest or the lowest place of the society. Qunari have their hive mentality and Elfs are either Slaves or Dalish. In short Humans have more blank spaces i can use for roleplaying. Other races are a little bit more restricted to play.
You realize you are talking about humans who are of nobility, whose family is pro-Chantry and who could be part of the Circle of Magi which means they are not neutral at all. Neutral is the last word you should be using for Trevelyans. Lavellans and Adaars are neutral because they came to the conclave as mercenaries and spies whereas Cadashes came due to their family's stake in lyrium trade.
Technically, as stated in the character cards, humans are supposed to have a pro-Chantry view. In fact, if you play as a human and when Cassandra asks you if you believe in the Maker and if you answer no, she disapproves but she does not for the other races. I would say that the Adaars and Cadashes are most neutral in their worldview since Tal Vashoths and Surface Dwarves do not worship any deity by default.
Adaar is Tal Vashoth, Lavellan is from a clan with little human contact so technically they offer the most options when it comes to roleplaying since they have not been exposed to Andrastianism or the nuances of being associated with serious leadership.
Your statement only applies to fantasy games in general. In Dragon Age, things tend to be a little bit different, especially if you look at Origin stories or backgrounds for races. Humans are the most restrictive with only two possible backgrounds, Nobility & Circle Mage (Hawke doesn't count because there were no option for other races) and Elves as well as Dwarves are the most freeing since you can either be a Noble or a Commoner or a Surfacer or a Circle Mage or a City Elf or a Dalish Hunter or a Dalish First.
