I was wondering if it's possible to romance Liara/Sam/Kaiden if you romanced Thane, and continued his romance till his death? Also, if you romanced Jacob, when you run into him with his new girlfriend, could you romance someone else after?

I'm not 100% sure on Thane, but yes, you can romance someone else after Jacob.

Lock-ins occur after Thane has died, so yes, you can romance someone else after the Coup.
A Liara->Thane->Liara/Thane->Liara ship is really odd. Romance Liara in ME1. Then romance Thane in ME2. In ME3 tell Liara you want to continue the romance. Then go meet Thane in the hospital and jump on him. Now go back to Liara. She will tell you she found out about you and Thane and she is tired of playing games. After the next mission, go back to Liara and she will sit on your lap, kiss you, and tell you you are a flatterer. Weird.

The only character I ship with my Femshep is my Sheploo.
Of course, my Sheploo is having a 6-some with Miranda, Femshep, Femshep's clone, Kelly, and Dr. Michel.
I think he has a thing for redheads. Don't know why.

Liara wins Shepard's heart more than any other character, but I have romanced everyone in ME1, ME2, but I haven't bothered to import Thane's romance after seeing what happens with him. Ending things with Miranda was worth it just to see her show some emotion instead of being an ice queen. Breaking it off in ME2, she acts like it no big deal.

You don't have to go that route in ME3. IIRC, you can be noncomittal with Liara about restarting the relationship and still rebound to her after Thane dies.
